Green Smoothie With Ginger, Carrots & Pea Shoots

While it is true that I am a lover of all things deep-fried and loaded with trans fat, there's a small fraction of my stomach that really likes healthy greens.  I call this sensible minority my alter-ego or the 'green party' that lobbies on behalf of my well-being.  While most people are trying to figure out how to make their green smoothies taste less like vegetables, I'm trying to figure out how to make mine taste more like 'em.  I just love that bitter, earthy taste.  I'll even try a seaweed smoothie, if I can find a decent recipe.  I will admit that sometimes these green gobbers can lack a little zing, which is why the recipe I'm going to offer up uses ginger.  This gives the smoothie more dimension, without making it taste too much like a fruit smoothie.


The Green Alter Ego Smoothie 
Makes Approx. 2 glasses

3 handfuls of spinach or kale
2 carrots, grated
1 tsp of freshly grated ginger
2 handfuls of pea shoots
1 cup of rice milk
3 tbsp. of greek yogurt

1 handful of frozen berries (*super optional)


1-In a blender, mix your greens with the grated carrot, pea shoots, ginger and greek yogurt until well combined.
2-Add rice milk to get a smoother drink (1 cup usually does the trick).  Garnish with pea shoots if desired.
3-*Add some frozen berries to the mix if you wussy out. If you bring this concoction to work, watch as all of your co-workers stare at you in slight disgust.  Gulp down promptly and say "yum", even if you don't mean it. 

Don't worry. I haven't gone ultra-healthy on you.  I'll be posting about southern fried chicken by this time next weekend.
